Mike's Szechuan Peanut Pasta

Quick Recipe


This is one of my favorites because it's very quick and I usually have everything I need around the house. Note: I leave out the scallions most of the time because they aren't neccesary and I don't usually have them at home.
"Szechuan" noodles with peanut sauce - This is a Jane Brody recipe

  • 12 oz pasta (I like spagetti best)
  • 1/3 cup hot water
  • 1/3 cup peanut butter
  • 2 tea spoons soy sauce
  • 2 tea spoons vinegar
  • 2 scallions chopped
  • 2 cloves garlic minced
  • 1 tea spoon sugar
  • 1/4 tea spoon hot pepper flakes

    Cook pasta al dente, drain, set aside, and keep warm. Note: you can prepare the sauce while you wait for the pasta to cook.

    In a medium bowl blend water, peanut butter, stir in soy sauce, vinegar, scallions, garlic, sugar, and hot pepper flakes.

    Combine sauce with hot spagetti in serving bowl.
